Pumpkin Bread Pudding




Bread Pudding:
5-6 cups white bread, cut into cubes
1 cup pumpkin spice egg nog (cream or regular egg nog may be substitued)
1 cup milk
4 eggs
2/3 cup brown sugar
2/3 cup white sugar
1 cup Pumpkin Puree
3 Tbs butter
1 tsp cinnamon
1/2 tsp ginger
dash of clove
1 tsp vanilla extract
1/4 cup sugar
1/2 tsp cinnamon

Preheat oven to 350 degrees.

In a bowl, pour milk and eggnog over cubed bread and stir to coat.

In a separate bowl, whisk eggs with brown and white sugar. Add pumpkin, butter, vanilla and spices. Add to the bread mixture. Stir well. Pour into an 11"x 7" baking dish. Sprinkle top with cinnamon and sugar mixture and make for 45-60 minutes, until set.

Serve with Maple Cream Sauce and whipped cream.


Maple Cream Sauce:
3/4 cup maple syrup
1/2 cup cream
1 1/2 Tbs butter
1/2 tsp pumpkin spice

Combine all ingredients in a sauce pan. Bring almost to boil.
Sauce will thicken as it cools.
Serve over Pumpkin Bread pudding.

So this is my first successful cut and paste experience! I love trying new recipes... I'm not much of a bread pudding kind of girl..but this is fabulous! Thought I would share seems how I flaked on the last girl weekend!

Jake Won!!!




I know he is the cutest thing ever...Well last Sunday he was just being so naughty during Sacrament meeting..just standing there screaming at the top of his lungs! I took him out first, then it was Curt's turn...from what I gather he was going in and out of the double doors at the entrance, first he got his fingers in the door, then again Curt tried to get him out and finally he had made it! He was in the entrance, Curt said he was behind the curtain so he thought he would just let him play with his monster truck, until he realizes he is trapped in there! You know like Jake would learn a lesson or something?? Meanwhile Curt falls asleep on the couch....I know awesome! Well he wakes up to someone saying..."Um Curt" and there standing in the entrance with his face up against the glass is our sweet little boy..who had not been playing with his monster truck..instead behind the curtain..took off his shoes, socks, pants and diaper! So I guess Curt was the one to learn a lesson! Leave a 2 year old unsupervised for a "minute"...I don't think so!!!

Halloween Fun


We had a fun Halloween, I volunteered my little heart out on Friday, I'm Gabe and Grace's room mom, so I had 2 fabulous parties! I think Grace's won for the coolest..we had the lunch room bake Papa Murphy's jack o lantern pizzas, had root beer floats and played games. Then we went to the Halloween Carnival where I had made these two adorable cakes for the bake sale and then I spent 3 hours running a game, although Grace did all the work! Michelle would be proud! Noah only put the wig and bow tie on so he could get candy! Yes my baby is rainbow brite..I have an adorable Frankenstien but he would have nothing to do with it...Curt caved at the last minute and Jake was thrilled he got to wear it trick or treating!

Baby Steps!


I am so proud of me! Today I really was a "homemaker" I've decided to freeze corn and zucchini. I made the raspberry jam a couple of weeks ago..mostly I am proud of myself that I did not let the fresh vegetables that my sweet neighbors gave to us go to waste! Tah Dah!!

Back to School..




So, I am little late..as always! I can't believe it has been a month since school has started. I am so grateful for my kids teachers..so far so good! I miss those guys while they are gone..but I have to admit I do love feeling more organized and together...I feel like I can get the stuff done and am ready for them when they come home.. I love my alone time with Jake - you know my little number 4 just hasn't had that! Of course my kids loved their back to school candy card..Thanks Angie for the idea!

Surprise!


Noah and I survived our first scout camp! His bike broke a week before camp and he had been searching for the perfect one...Grace had the idea that we go get one in St. George to surprise him when he got home.. Curt and I were totally on board.. He is so "picky" these days we had to make sure the shop would let us return it, if we needed to. The best part was we took his money he had been saving from lawns..we only agreed to paying half! We all thought we were so awesome! I think Noah did too! He loves it!! Yea!!

I'm Not Ready!!


So, my Noah is 12! I can not believe it..watching him pass the sacrament on SundayI was so proud and just pondering on the future he has and what he will become..he has so many strong qualities I know he will be an amazing young man! Although I am not ready...he left for a 4 day scout trip..realize that he still asks me to tuck him in each night and comes to my bedside in the middle of the night when he can't sleep..Luckily camp is only 15 minutes away and I've signed up to do 2 lunches so that I can see him!! Curt had him get out his scout shirt, I had him put it on for the picture, I found it on the floor this morning..on purpose I am sure!!
